Go to Admin ->Groups ->Attribute Visibility, then ensure that for any attribute you would like to hide from the edit screen says either 'visible when viewing' or 'not visible'. Any attribute with the value 'visible when editing' will be seen by the user in the Edit Asset page.
Please note that if a user is a member of another group for which an attribute has a higher level of visibility then that takes priority, and the user will be able to see the attribute.
